I’m not sure what inspired me to film my day and share it with you. Mostly I think its just an attempt to be more authentic and connect with my viewers. In this video I take you through a day of fishing, drawing, and cleaning my camera sensor. No two days are alike, and that is the only constant thing about our days. Sometimes you assume that just because you’ve gone some place tons of times before without anything bad happening that you’ll get the same outcome the next time you go there. Well, that’s what we thought as we headed out to one of our favorite boondocking spots in Colorado. After about two weeks of being in our spot we woke one night to something most RV’ers probably dread—a mouse in the camper!

After a long day shivering in the frigid winds at 14,000 feet on Day #12 we were ready for another recovery day. So, for Day #13 we planned on moving camp from Leadville down to Poncha Springs. Along the way we’d do lost of touristy things and meet up with some great friends.
It’s finally time to tackle a classic camp-meal: Chili! This has been a long time favorite of mine that I didn’t think could get better. We’ve been living in our camper for over three years now and have always enjoyed seeing what great food we can make on the road. Just because you’re traveling or camping doesn’t mean you can’t eat well. Our camper kitchen is a perfect space for cooking just about anything, but when we’re out in nature nothing beats cooking over an open campfire. This meal allowed us to do both! Happy Sunday Funday!
We will begin with a rather non-traditional “camping” dish: Spring Rolls! Mandy majored in Chinese during college, and in her time there she learned to make these spring rolls from her good friend, Candice. When Mandy asked her permission to share this recipe, she simply replied “of course, good food is meant to be shared”!
When we moved into our nüCamp T@B 400 camper and 2019 Toyota Tacoma we couldn’t be happier. But we soon realized that our truck would need a few improvements to handle the extra weight of the larger camper. Mainly, we needed something to help reduce the amount of squatting we were seeing in the back end of the truck when we hitched up the camper.
